Ingredients

  • 4 lamb loin chops (bone-in)
  • 2 tablespoons canola oil
  • Salt and freshly ground black pepper (to taste)
  • 2 sprigs fresh rosemary (or 1 tablespoon dried)
  • 2 garlic cloves (smashed)
  • 2 tablespoons butter
  • 2 cups frozen peas
  • ¼ cup fresh mint leaves (plus extra for garnish)
  • 2 tablespoons butter (for purée)
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper (to taste)

Directions

Prepare the Lamb Chops:

  1. Season the lamb loin chops generously with salt and freshly ground black pepper on both sides.
  2. Heat canola oil in a heavy-bottomed skillet or cast-iron pan over medium-high heat.
  3. Once the oil shimmers, add the lamb chops and sear for 3–4 minutes on each side until a golden crust forms.
  4. Add rosemary sprigs, smashed garlic cloves, and butter to the pan.
  5. Tilt the pan slightly and spoon the melted butter over the chops for another 3–4 minutes to baste and infuse flavor.
  6. For medium-rare doneness, cook until the internal temperature reaches about 135°F; adjust as desired.
  7. Remove the lamb from the pan and let rest on a plate, loosely covered, for 5–10 minutes before serving.

Mint Pea Purée:

  1. Bring a small pot of water to a boil and add the frozen peas. Cook for 2–3 minutes until bright green and tender.
  2. Drain and immediately transfer the peas to a blender or food processor.
  3. Add fresh mint leaves, butter, lemon juice, salt, and freshly ground black pepper.
  4. Purée until smooth, adjusting consistency with a splash of warm water if needed.
  5. Taste and adjust seasoning, adding more lemon or mint for brightness.

Plating the Dish:

  1. Spoon a generous amount of the mint pea purée onto each plate, spreading slightly with the back of a spoon.
  2. Arrange the lamb loin chops on top of the purée, allowing the sauce to pool attractively beneath them.
