Korean Short Rib

This traditional Korean dish features tender, flavorful short ribs marinated in a sweet and savory mixture of soy sauce, fruits, and aromatics. Grilled to perfection, these ribs are a delicious balance of sweet, salty, and smoky flavors and perfect for pairing with the 2022 PlumpJack Syrah, Napa Valley

Cookware

  • Blender,
  • Ziplock bag
  • Grill (charcoal preferred but gas is ok)

Ingredients

For the Marinade:

  • 1 cup soy sauce
  • 1 cup water
  • 1/2 cup brown sugar
  • 3 tablespoons sesame oil
  • 3 tablespoons mirin
  • 1/4 cup honey
  • 1 Asian pear
  • 1 Fuji apple
  • 1/2 kiwi
  • 1 tablespoon fresh ginger (peeled)
  • 5 cloves garlic
  • 1/2 medium onion
  • Green onion (to taste)
For the Meat:
  • 3 lbs thin short rib (thin cutlets with rib bones in, available at most supermarkets)
For the Garnish:
  • Sesame seeds
  • Green onions (chopped)

Directions

  1. Soak the Ribs: Place the short ribs in a bowl and cover them with cold water. Let them soak for 30 minutes to remove any excess blood and impurities.
  2. Prepare the Marinade: While the ribs are soaking, combine all marinade ingredients in a blender. Blend until the mixture is smooth and well combined.
  3. Marinate the Ribs: After soaking, drain the ribs and pat them dry. Place the ribs in a large Ziploc bag and pour the marinade over them. Ensure the ribs are fully coated and submerged in the marinade. Seal the bag, removing as much air as possible, and refrigerate overnight or for no more than 12 hours. Marinating longer than 12 hours may over-tenderize the meat due to the enzymes in the kiwi and pear.
  4. Preheat the Grill: Prepare your grill by heating it over red-hot coals until no flames are visible, or set a gas grill to 450°F–550°F.
  5. Grill the Ribs: Remove the ribs from the marinade and place them directly on the preheated grill. Cook the ribs for about 3-5 minutes on each side, or until they are browned and have a few char marks. Be mindful of hot and cold spots on the grill to ensure even cooking.
  6. Garnish and Serve: Once cooked, remove the ribs from the grill and let them rest for a few minutes. Garnish with sesame seeds and chopped green onions, if desired. Serve the ribs with rice and enjoy!
